hi,
i recently installed macOS catalina, i am trying to backup my ipad through the finder, but the backups section in the ipad general tab is all grayed.
tried running sync, restart computer and device, reconnect - nothing seems to help, any idea what can be the problem ?

Restart both machines.
If that fails restart your Mac in Safe Mode and see if the issue is still present
After coming back to normal mode and of the issue persists, on your Mac, create a new user. Switch to it and try the backup there. If the issue is not present then it is likely to be in your user area
