The Music app on my iPhone does not have a Shuffle Button as shown in online instructions. There appears to be no way to turn shuffle on and off, and it is currently on. This makes it extremely difficult to listen to book chapters, for example, which are meant to be heard in order. What's wrong?

Thank you, but as I tried to explain, there is NO shuffle button. It's not a matter of not being able to find it. It just isn't there. See the attached screen shot.
I have deleted the app and reinstalled it, restarted my phone, and everything else you suggested.

I understand that you are having some difficulty locating the Shuffle button in Apple Music. I’m linking an Apple Support article that lays out exactly where to find it. It even has a great animation that shows where it is.
If you are still having an issue finding it, you might next try forcing the app to quit and then next, restarting your iPhone. I would also look to see if you are unable to shuffle any album or playlist on Apple Music or if this issue is related to specific content.
I would also mention that Apple Books might be a preferred method to listening to audiobook when possible.
