How do you keep the timer and stop watch display on continuously? I use the stop timer and stop watch while exercising to remind to change every 40 seconds, but I have to keep taping the watch. I want the timer to stay on continuously until closed.
Do you have it set to show the last use app on the Wake Screen? In the Watch app on your phone, go to General>Wake Screen>On Screen Wake Show Last App and make the appropriate selection.
Also, make sure Always On is set up:

I seem to recall a couple of threads about the Timer app on the Apple Watch using watchOS 6 and it not staying on the screen as long as it did before. So, it's possible there may be some sort of bug.
You may want to look at some of the tabata-type timer apps and see if any of them work out any better for you.

It is a Series 5 OS 6.6.1
