Syncing iPhone to iTunes Without Restoring

I have been using an iPhone XS without syncing to iTunes for a few months. Now when I try to sync it, iTunes wants me to either "restore with an old backup," or "set up as a new iPhone." I don't want either. What do I do?

Use Set up as a new iPhone. This gives permission for iTunes to connect to the device and back it up. It won't change any content on the device. If there is media on the device that isn't in your library see Recover your iTunes library from your iPod or iOS device - Apple Community.
