I have this same issue. I'm running High Sierra 10.13.6 as my iMac won't update beyond that. I followed your instructions but when I unhide the folders they are still greyed out and won't display the folder contents. My data is still on my iPod. Any thoughts?
Cmd+shift+period worked to reveal the hidden folders your article mentions but those folders are greyed out. I tried to select each folder and press Cmd+shift+period on each one to unhide the contents and no dice! I guess I will try this Touch Copy software. I would have rather not have to spend money to gain access to content I already own...APPLE!!

See Repair security permissions for iTunes for Mac - Apple Community. You should be able to remove the hidden status from the items once you've copied them to your computer. You should do so before attempting to add to the Automatically Add to iTunes (Music in Catalina) folder, or at least before you allow iTunes/Music to run.
