Don't include signature on replies or forwards to emails

How can I set Mail not to include my signature in replies or forwards to emails??

It is really frustrating and time-consuming in correspodence

Hi Andrew, you can't pick the granularity, you have to Mail>Preferences>Signatures>Account & use the tiny - icon to remove it or delete the Sig one Replying or Forwarding.
