Does anyone have any tips as to why my computer continually restarts on me?

You have not succeeded in removing Sophos, which is likely to be causing these issues. I provided two suggested alternatives above. such software is not needed on your already well-protected Macintosh. Never install more than one.
MalwareBytes is extremely Mac-specific, and far more effective than any other for use on the Mac. ClamXAV is important because it can be set to run only on demand, and does not beat the pudding out of your computer while trying to protect it.

MacOS detected that somebody modified a part of a Cache after it was freed and returned to the free-list.
The extensions at the scene of the crime were Bluetooth extensions. The bad process was bluetooth Audio.
Thse sorts of panics do not occur in un-modified MacOS kernel.
But you are not running MacOS kernel, because you have chosen to modify it with these very invasive extensions:

Sophos and other so-called anti-Virus scanners have no place on your already well-protected Macintosh computer. In their zeal to be the first to inspect all your data for antique Windows Viruses that could not possibly infect your Mac, they often intervene ineptly in various ways that leave your Mac MORE vulnerable to attack, and waste enormous resources and do nothing additional over what MacOS already taking care of for you.
Effective defenses against malware and other threats
Also, the current version of parallels is version 15. If you are going to run Parallels , you MUST kept up to date. Otherwise, you need to un-install it.

My computer crashed on me again yesterday.
I've attached a new crash report.
I removed parallels. I need to follow up with IT to see if there is something different they can do for virus protection.

This is my work computer. They have decided they should replace the hard drive.
Surely, if it was the hard drive failing, it would have shown on the diagnostics?
It is possible, but unlikely that a failing Hard drive could be causing the symptoms you reported.
If your school or work requires you to have Anti-Virus installed, try running MalwareBytes or the free version of ClamXAV. Either of these can be set to scan only on demand, vastly reducing their resource-hogging and vastly increasing stability of your Mac.
So, if you turn off Wifi on the Computer foes it still crash?
