I can connect my iphone to my pc with a usb cable, and it shows up as a
device in explorer. I can navigate to photos and copy photos to my pc as
normal, but if I try to copy a video, it starts to copy, and then a
message comes up that says my device stopped functioning. There's plenty
of disc space. I can do via icloud or google drive. but it takes too
long and uses a lot of bandwidth. Iphone 11 and windows 7.

This happens due to file conversion from H.265 to Windows friendly format. On the device, go to Settings > Photos > scroll to the very bottom > set "Keep originals" instead of "Automatic".
If it still throws an error, try iMazing, never had issues with it. Another option is to use Image Capture on Mac.

I am having the same problem but it has nothing to do with iTunes. Its a file transfer problem. Any help would be great.
