I recently purchased a new hard drive for my mid-2012 Macbook Pro and after installing it, I attempted to copy my old HD data to the new one with the restore function in disk utility and went through the steps correctly and said it had finished. Then I checked the new HD, which had none of the old data on it and checked the old HD and all the data was erased. Anyone have an idea on what happened?

The most likely explanation is that you chose the wrong disk to restore. It's an easy mistake to make.
Restore will do what you tell it. If the source is empty, the disk being restored will become empty. I'm not even suggesting that's what you did, but it's a plausible explanation. The source volume is unaffected by Restore.
When restoring a disk I double- and triple-check what I'm doing, get up and walk away for a spell, then come back and check a couple more times before finally committing to it.
I surmise you have no other copies or backups?
I can see myself definitely doing that even though I don’t remember doing so, but why would my source HD be deleted? I thought it was only the destination would be wiped out in the process?
I do have a partial back up, so I just will most likely find a data recovery service. I appreciate your insight on this manner Cheers!
