I am looking at buying the Apple Watch 5 series. I want to use it when I go for runs and not have to take my phone with me. This includes tracking my runs and listening to music. I have Spotify Premium - is there a way to listen to songs on the Apple Watch 5 GPS only whilst on my run. Can I download my Spotify playlists to the watch.

To be clean. There is no Spotify support way to listen to their music on your Apple Watch.
Spotify does not support streaming in any form.
Spotify does not support offline playback, but there are hacks. fieryjack gave you a pointer.

Pandora Streaming
It wouldn't have been able to have been sent a couple of years back, Apple did not have a API for 3rd party streaming at that time.
Since Spotify has made monopoly complaints regarding the Apple Store in the EU and Congress is taking. testimony regarding the. same issue it probably will be awhile.
Doesn't look this is happening anytime soon. I love Apple, but I think a 30% cut from Spotify is a bit greedy and unfair. In fact, I returned my Apple Watch because I can't stream Spotify (without the phone) and I'm sure I'm not the only one, so I'm not sure this is working out for Apple. I mean it probably is, but I'd definitely by an Apple watch if they took a more reasonable cut from Spotify. I know how capitalism works, but I don't want Amazon or Apple to slowly kill every other smaller business out there.

Then how does Pandora stream music on the Apple Watch?
I never said it couldn’t stream. You can stream Spotify, iHeartradio, Pandora etc. You just can’t download them to the watch itself to play offline (i.e. a runner like me that wants to run with no phone and has GPS only watch model) To listen to music you need to have it stored physically on the watch itself. The only way to do that is a subscription to Apple Music or physical media like a CD that you have loaded into your iTunes library and sync with phone/watch
This doesn’t help at all. The article you linked literally says you can’t do it.
