Restore iPhone to specific date

I accidentally deleted my Health and Activity data and want to restore that data as it was two days ago. Assuming my iPhone is backed up daily to iCloud (which I understand is how the backup process is supposed to work), how do I restore to that specific backup from two days ago? When I go through the Erase-Restore process, the only backup available is from 4 months ago.

Thanks for the quick reply, razmee209! Any idea as to why the backup from two days ago is not available (or any other daily backup since 4 mos. ago, for that matter)? I make daily (sometimes more frequently) database backups for work purposes so I can have a restore point in case things go awry. Those daily backups are eventually deleted in favor of a weekly, then monthly backups. Maybe these iOS/iCloud backups don't work that way?
