It did shut down that one time, but the issue is still occurring without the Logitech receiver being plugged in. It hasn't been plugged in at all since the successful shutdown.
Do you have any other external peripherals connect to the Mac - except Keyboard/Mouse?
Also my default OS seems to have changed to Windows, is this due to NVRAM/SMC resets?
Are you able to switch to macOS using Bootcamp Control Panel?
Reset NVRAM or PRAM on your Mac - Apple Support will change
"Settings that can be stored in NVRAM include sound volume, display resolution, startup-disk selection, time zone, and recent kernel panic information. The settings stored in NVRAM depend on your Mac and the devices that you're using with your Mac."
