My wife and I had the same Apple ID. When I try to set her phone up with her own I’d I lost all her contacts email photos etc.. I did back up her phone to iCloud before hittin Erase Now. Can I revert her phone to its old Apple ID and get her stuff back from the cloud?

With separate Apple IDs (the recommended way), you could use Family Sharing for almost everything except Contacts.
