Where can I find relevant tutorials for Numbers 6.1? Currently looking for “pivoting” guidance. (Need other topics too. )

One helpful resource is Help > Numbers Help in your menu.
Don't know what you mean by "pivoting."
Perhaps you mean "transpose" a table? You can do that via Table > Transpose Rows and Columns in your menu.
Or perhaps you something like Pivot Tables in Excel? If so search for "categories" in Numbers Help and check out the 'Categories' template at File > New in your menu.
