My computer (MacBook Air) is not even two months old and the trackpad will 'freeze' - there is no rhyme or reason, it is random when it happens and the only remedy is to shut off the computer and restart. What can be done about this?

I bought mine in March 2020. I have noticed the trackpad randomly freezes. I don't have to restart. I can usually use the up/down keys and it will eventually unfreeze. But I agree, this is a new computer and should not be happening.
Same here, my problem happens only after waking up the Mac after sleep mode, it trackpad will freeze for 4-5 seconds and then it starts working again, rarely it will freeze for 10 seconds but I don't need to restart it
Please determine if the same problems occur in "Safe Mode": Use safe mode to isolate issues with your Mac. I realize it may take some time to conclude whether the problem occurs or not, and it's not convenient to use a Mac in that mode for any length of time.
