I wanna keep on keeping my iPhone 10 up to date but I do not want covid tracking software or anything like it. Are you offering an update without it?

The tracking is off by default and can only be activated by downloading an app if and when one is developed and then you would have to activate the app. There is no update without it at this time. Do not worry about it.
