I'm glad you decided to reach out on the Apple Support Communities. I was sorry to read that your Bluetooth headset isn’t working as well with your iPhone 11 Pro Max as you expected. I’d be happy to offer a few suggestions to see if I can help.
First, I would isolate a little. I know that your headset worked with your iPhone 8, is it disconnecting like this with any other devices (e.g. updated iPad or Mac)? What about other Bluetooth devices, are they disconnecting on your new iPhone?
If you narrow it down to only this Bluetooth headset and your new iPhone, check to see if your headset needs a firmware update:

Then, I would try these steps, testing between each:
- Update your iPhone, iPad, or iPod touch - Apple Support (if applicable)
- Toggle Bluetooth off and back on in Settings (not Control Center)
- Restart your iPhone - Apple Support
- Resolve Wi-Fi and Bluetooth issues caused by wireless interference - Apple Support
- Disable Wi-Fi in Settings (not Control Center)
If you’re still not able to get it to stay connected try forgetting it in Settings, reset it to factory default settings (your headset, not your iPhone), and pair it again. You may need to reach out to Plantronics for instructions on how to reset your headset.
