My sent email from is @me.com and not @mac.com. How do I force @mac.com

I have aliases of @iCloud.com, @me.com, and @Mac.com. However, when I am filling out any paperwork for a job, club, or anything else and the email is requested I have always used @Mac.com. However, I was recently informed that my email was blocked by a website because the senders address (i.e. my address) was from @me.com and not @Mac.com; so my question is how do I force the email client to show my address from my @Mac.com? I tried Mail:Preferences:Accounts and changed it in the Email Address drop down list but the @Mac.com will not 'stick' and when I close the window and go back to the account information, it is still @me.com. Same thing when I email to myself, it still says @me.com. It turns out that this has been an intermittent (but significant) problem over the years that I have not been quite aware of until today.

You are very welcome. So, this case is huge exception, and I still would leave things alone. All you could do anyway is to change your Apple ID to name@me.com or use this sort of email alias--Use email aliases on iCloud.com https://support.apple.com/en-nz/guide/icloud-ipad/mm6b1a490a/icloud

BTW, my Apple ID, iCloud, iTunes, etc accounts are @mac.com and not me.com or icloud.com. I do not understand why Apple chose to change my email to @me.com and have been completely unaware of the consequences for many years until now. This is actually a much bigger problem than I thought.

I was able to figure this out using the document that you linked above. The document shows how to 'set a default address to send from' inside iCloud email, but it turns out that the same thing applies to the Apple email client on my computer. Inside the email app under preferences:composing there is a drop down that is titled "Send new messages from:" and I can pick my @Mac.com account and that works. I was confused in thinking that the preferences:accounts tab would change this setting. Thank you for your quick replies and assistance, have a good day.
