Finder crashes when I try to restore iPhone backup onto my new iPhone

This is a brand-new Macbook Pro running Catalina 10.15.5 and the iPhone is a brand new X running whatever the latest version of iOS is. My previous iPhone X got water damaged and the Face ID sensor stopped working. So I backed it up to my new Macbook Pro and exchanged the broken phone at the Apple store for a new one via Apple Care.

Now when I connect the new iPhone to the Macbook Pro and try to restore the backup, as soon as I get through the agreement and checkbox and then click 'continue', Finder instantly crashes. I tried putting the phone into recovery mode anbd got the same result.

Can't you set it up as new without Finder? Also, seems there's some issue with OS. Contact Apple if possible, or copy the backup to another computer and try restoring there.

I just tried to go through the process of setting up as a new iPhone and Finder crashes at exactly the same place - 1 milisecond after I press 'continue' 😡
