Restoring devices

If I erase everything from one device (restore to factory settings), will it affect my other devices? And can I now give that device to someone without any of my former information being accessible to them?

If your erase the device, no data synchronised with other devices will be lost.

This support page details the actions you should follow to prepare the iPad for use by someone else:

What to do before you sell, give away or trade in your iPhone, iPad or iPod touch – Apple Support

This process will erase all data - and deactivate the Activation Lock that would otherwise prevent setup by the new user.

I hope you find this information and clarification to be helpful.
