Bypass new OS

I have a 2009 iMac that I have finally replaced. I need to wipe the hard drive before receyling, however, it is stuck on the OS update screen “mac os can not be installed.” How can I bypass this screen? I’ve tried turning off/on. and pressing restart. I also need to properly eject a usb drive attached to the old iMac before recycling. Any advice would be appreciated.

Boot Recovery with Option-Command-R, as that’ll get the latest version for the Mac.
