it takes about 1, 2 minutes to open an App in new 2019 iMac

I just got my 2019 Imac 21.5 inch today and after setting it up like it lags a lot .... like A LOT. When I try to open apps it takes about like a minute or two to open. How can I fix this?

If you are within the 14-day return periods, I would return that one, which appears defective, and get one with Apple's solid state drive (SS) and more RAM. Creative Cloud will probably not be happy with 8GB RAM.

Even if the current drive were not running at glacial speeds--which it is--it will never feel fast. It is a slow 3GB/sec drive on a fast 6GB/sec drive bus, and is a slow 5400rpm model.

Note the 14-day return option only applies to computer bought form Apple online of from an official Apple retail store. Authorized resellers have thei own policies.

If your purchase was price driven, you may have purchased the base iMac with a slow rotational drive. Others have complained about these slow drives, and their impact on performance. If you are launching applications that have large RAM demands, that may be another reason. And when you first boot the iMac, there are several normal house-keeping processes, including Time Machine that can prolong competing application launches for the first few minutes too.

Otherwise, EtreCheck will show us the likely reason for your iMac lethargy. Post the results of the Etrecheck report using the following toolbar item, where you copy/paste the results:

Well, Etrecheck thinks your internal rotational drive is failing. The Read/Write performance data also suggests this, as it is abysmally slow for even a rotational drive. This can be resolved by purchasing a fast, external, solid state drive (SSD), and installing Catalina and your third-party applications there. Then you set that drive to be the default startup drive.

Even with the 8GB of non-upgradable RAM, you simply will not believe how much faster the above Thunderbolt 3 alternative drive solution will make your iMac. That RAM suggests you will not be able to run several creative cloud applications concurrently, or in concert with Google Chrome.

You might consider the trial of Carbon Copy Cloner to clone your existing internal drive to the external drive, and then switching the startup drive in System Preferences : Startup Disk.
