Automatic vs Manual Desktop & Documents iCloud Drive

Hi


So I've read about the option to sync the desktop & document folders in iCloud Drive. I just wondered, what difference is there between this option, and manually moving the desktop and / or documents folder to iCloud Drive?

The final result is basically the same as long as when copying manually you copy the files so you keep them as they appear on the computer, for example in the same folder. Manual copying also allows you to choose what you want in iCloud Drive.

As I understand it, there is no control over the files uploaded to iCloud Drive when checking the 'Desktop & Documents' option? I want more control - I have files that aren't so important, but are quite large that would eat up the iCloud Drive space, and others that I wish to keep in my documents folder, but don't need to have access to / backup for.
