Yes, but you can only use one at a time i.e. a splitter with an A/B switch.

The HDMI port cannot handle two different displays. Connect the second display to a Thunderbolt port with the appropriate adapter or cable.

A Mac mini can run at least two displays simultaneously. No switches or splitters are needed. What year is your Mac mini, and what model displays?
