My husband has a pair of AirPods Pro that he uses with his iPhone and iPad in addition we share an Apple ID. I recently purchased a pair for myself and tried to connect my pair to my iPhone and iPad mini. So, I first deleted his pair before I connected mine but because we share an Apple ID I also deleted his connection. Can we both be connected to our devices separately with two different AirPods while sharing an ID if so, how should I go about it?
Whoever creates the new one on their devices signs out of the shared Apple ID then adds their new one.

If I keep my Apple ID and create a new one for my husband do I have to sign out of my devices or just the devices I want to change? Keep in mind that neither one of us takes advantage of Apple iCloud so we are not in danger of losing anything.
Signed out of my husband iPhone and iPad and try to create a new Apple ID with his existing email and kept getting a message that the email exists and I couldn’t create an Apple ID with it. Do I have to create another email not associated with my email address?

Then your Apple ID, if you are creating the new one, will have to be with your email address.
Your mistake is that you are sharing an Apple ID. One of you create a new Apple ID for yourself and then set up Family Sharing.

No we have separate email address but we can access each address on our devices.
