I just found a fix that worked for me! Supposedly the custom dictionary in iOS/iPadOS 14 isn’t compatible with the one from previous OS’s, and resetting the keyboard dictionary might reduce or eliminate the keyboard lag problem. I was doubtful at first, but I went ahead and reset my dictionary, and INSTANTLY the lag problem disappeared!
To do this, go to Settings > General > Reset > Reset Keyboard Dictionary.
Another potential fix that might work for some of you is force-restarting your device. The steps for doing this is different depending on which iPhone/iPad you’re using, but it usually involves pressing and holding all the buttons on your device at once until the Apple logo appears. It didn’t work for me, but it might work for someone.

I believe my keyboard lag problem in Notes was caused by my Note being too long. I keep lists that, after a while, get very long. I upgraded the OS, rebooted the phone, deleted dictionary and non-native keyboards to no avail. Then I tried starting a new blank note and there was no lag. Went back to an old lengthy note and the lag came back. My verdict is that, in my case, I was using Notes too much like a word processor. Since Notes is constantly saving, it couldn’t keep up. Test yours by starting a new Note and see if you have lag or not.
My solution: keep notes shorter or use Pages word processor.
I found something worked for me! I copied my note that was responding very slow and pasted it into a new note and that fixed it!!! I did reset the keyboard first and that didn’t fix the original note. I’m not sure if you need to do that before copying and pasting into a new note or not.
So I reset my dictionary and it helped a bit.

I am having this issue as well, especially when using an external keyboard that attaches to my iPad Pro (1st Gen). I tried the hard reset...no dice. I tried resetting my keyboard dictionary...no dice, AND I lost all my personalized words in the process. I tried turning off the predictive feature of the keyboard...no dice. So I turned off ALL advanced functions of the keyboard (auto-correction, auto-capitalization, check spelling, etc.)...Dice! The keyboard now has very little lag (there is just a hint of it, but at least now it is usable). But should we have to lose ALL advanced function of our keyboard just to be able to type words in iOS14? That's really not a viable option for an upgrade. That's a downgrade, at least as far as user experience goes.
i found a fix that works perfectly for me (iPhone 6s plus) when the keyboard reset didn’t. It only works for individual notes, one at a time though. Open a lagging note. Select all and copy. Open a new note. Paste. Lag has completely stopped.
I did experienced the same after installing ios14 a few days ago.
Forced restart doesn’t do the trick.
One thing I’ve noticed was that, from my iPhone settings, my Apple ID doesn’t seem to be able to display all the devices where I have used my Apple ID. I am using same Apple ID on both my iPhone and my McBook. On normal occasions it should always displays both devices, but in this occasion it doesn’t.
So I thought it could be this reason.
I opened my McBook (currently on Mojave OS), check my Apple Id settings - all is well.
And then, I’ve checked my iPhone Apple Id settings again and give it a minute, it does display both devices after that.
I tried again to use my Notes again, and viola! the keyboard is back to its normal behaviour. No more lagging.
Apple should seriously check this as for some people it may cause panicked.
I hope this will help your case as well.
P.S. I didn’t reset my keyboard dictionary as some other advices I have seen online.
iOS 14.2 fixed Notes for me on iPad Pro 9.7. Screen keyboard still pops up when waking up app even though Logitech Create is attached and it has habit of going to full screen if it (Notes) was open in slide-over taking up that smaller “whole screen.” But I can type full speed again.
None of the suggested solutions worked for me (and I was very annoyed to have gotten rid of my custom dictionary for nothing). BUT working in a new notes doc (not my usual, now very long one) is much, much faster. So as a temporary fix, I will just have to keep everything in short documents, then they're usable.

FIXED !!! Idk if this will work for everyone but my fix was a combination of turning iCloud off for notes as well as restarting my iPhone by holding the power button and the home button .. hope this helps :)
are you on low power mode when it happens? I have this issue a lot, and finally decided to look it up and find a fix, kept going in and out of a long note to test it and look at solutions, but then my phone turned off low power autmatically and it went away. I manually turn on low power mode a lot to conserve power. I'm not sure if it'll continue working fine, but thought I'd leave this here to see if it helps anyone.
I had already attempted the force-restart with my iPad Pro 10.5 and that didn’t work. But, the keyboard dictionary reset did (after also closing and reopening the App). Thank you!
