not only did I have an with the 1.6tb of health data, I also didn’t have a current back up on my Apple Watch to back up new one too. Turned off health data, did a back up, turned it back on n did a back up. Restored content/settings. Cleared the health data storage and was able to pair my new Apple Watch with current data. Job done!
Following this guide worked for me because my health data was only saying 33GB, so I was able to fit the backup onto iCloud:

I'm not sure what to do if you are getting TB or PB, maybe try to backup/restore everything other than your Health data?
Can I weigh in on this. Mine was 61 PB had to reset my phone and start over
have you tried to update to 14.1?
This is a long shot, but try making an UNENCRYPTED backup to your Mac, because unencrypted backups exclude health data.
As to whether it’s a bug in iOS 14, the answer is probably not, because it hasn’t happened on either of my iPhones and normally a bug like that would result in thousands of posts here. However, something is clearly corrupted in your phone’s storage.
Yes, Apple is aware of the issue, but the fact they they are aware has nothing to do with this message thread. Apple is aware because people contacted Apple Support about it. This forum is not Apple support. And posting to this message thread does not make Apple any more aware than they already are. HOWEVER, contacting Apple Support gives them additional diagnostic information and may help Apple in finding a solution that does not result in data loss.

Hi Shawy - I've just gone though the other posts and noticed that you've had issues with your Apple Watch... can I ask if you've just purchased it? I've upgraded from a Series 3 Watch to a Series 6, and come to think about it, the first time this issue happened to me was yesterday after I'd set up the new Watch. I wonder if the Health app is combining the data multiple times or something... a long shot, but it might be the new Watches causing this as opposed to IOS 14 (or it might just be a huge coincidence).
It's not going great at present... the health issue has been fixed and I don't appear to have lost any data, although the exercise I did whilst this issue was going on that wasn't recorded hasn't appeared... I had hoped that it was stored somewhere and would show up when the issues were cleared, but no such luck. My biggest issue is I've lost a weeks worth of WhatsApp messages, as these weren't backed up automatically (could be worse I guess) and my Apple Watch has reverted to the set-up I had 3 weeks ago on my series 3... I spent a lot of time organising my series 6 and I have to do all of that again. I'm currently going through a full restore to iron other issues, and I've spent nearly 2 hours on the phone today with Apple support. Expecting a call back at 2pm GMT, so might have more info then. What I've gleaned from all this is that the only way (at present) to fix this is by doing a hard reset... most data (except WhatsApp and the Watch set-up) appears to be backed up despite the Health App issue, so this should restore as mine has.
It's been quite a complicated process and so I do not feel comfortable advising people to do what I've done in case it doesn't work for them. All I would say is to call Apple again, as they now have advice how to fix this issue form the Engineers but you may lose some stuff :( I feel for the the individual who cannot even open his WhatsApp as he has no way to back this up.
If I have any more info after speaking with the Apple advisor at 2pm, I'll come back to you all.
I believe this whole issue has something to do with the Apple Watch, but the multiple watches issue has been here for a long time. When your watch records data to health, it sometimes randomly does it as another watch.
It’s actually not random. Any time you restore an iPhone or restore an Watch it pairs as a new watch. It keeps the previous incarnations because each previous pairing reported data to the health app and is the primary source of the data accumulated when that was the actively connected watch instance.

That's not great Trepidus - the Apple Watch is a fantastic piece of kit, but not the best introduction if you cannot use all its functions. If you haven't already, I'd encourage you to log a call with Apple Support, as this will just add to the numbers and hopefully facilitate a faster remedy.
It's not random in terms of adding more Health data, but the space that's being reported is way off. I too have this issue, and oddly enough, my iPhone 11 Pro is also reporting the very same 1.61TB number for health data. Which also blocks me from being able to perform an iTunes backup, despite the fact that my 512GB model only occupies 270GB, and I have roughly 1.3TB free on my Windows 10 laptop with which to save it all. This is very frustrating.
I just noticed I had the same issue on my iPhone 11 Pro Max. I'm on IOS 14.0.1 & my Health app is reading 1.61 TB. I know this doesn't help much as far as a resolution but I'm hoping its a glitch that will be fixed with the next update. Strange how it reads the same amount of space for multiple people.
