Stop signatures in replies in MacOS Mail

I have seen complaints about this dating back as far as 2007, and yet it seems the issue still persists:

How can I prevent Mac Mail from adding signatures to reply emails, while still having it add my default signature to new messages?

It looks like even today, you can only pick one option: Signatures included with new and reply, or neither.

This is enormously frustrating and given that every other email client I've tried offers this simple setting, I see no reason why MacOS Mail still doesn't offer it.

We're out of luck for that kind of granularity within Mail.

I think you'll need an AppleScript to accomplish that.

That definitely lets you choose what happens on an individual message basis, but I need an option that covers default behaviours. In other words, by default, no signatures on replies, while at the same time letting me set a different default for new messages.

I think Apple needs to just fix this. It's hardly what I would call a granular level of control. It's not like I'm trying to set up some complex, rules-based behaviour -- though oddly that might actually be easier.

I mean even Gmail's web interface offers it:

ROFL... well said, friend. Ok, here's another thing Apple needs to fix while we're talking about Mail: Why on earth won't it respect my choice of default browser for contextual functions? When I right click on a highlighted word or phrase and choose "search with google" it opens Safari every time! :-(

Sorry maybe I wasn't clear. In Mac OS, my default browser is set to Chrome. This works for basically everything including links within emails. But that one contextual menu -- right click to search with google -- fires up Safari and there's simply no way to force it to use anything else. It's like it was hard-coded that way.
