Emails sent from iPhone not stored in Server Sent folder

After upgrade to 14.0 emails sent from my iPhone on an IMAP account are no longer being directed to the Sent folder on my email hosting service (which means that it is not sync'ing with my desktop and I have no single email history...nightmare...). It used to be possible to specify the Folder in Settings<Mail, Contacts & Calendar.......Advanced...etc, but this option is no longer there. How can I specify the folder for emails sent from my iPhone now?

To be clear...all emails sent from my desktop clients (I use both Apple Mail and Microsoft Outlook) do correctly go to the Server directories and sync across desktops/laptops (although also not with my iPhone). The issue is where the iPhone points to for its email records...which I need to be at the Server. How?

It sounds like you're running into an issue where your emails that are being sent from your IMAP account on your iPhone are no longer appearing in your Sent folder on your iPhone. Do we have that correct?

If so, you mentioned that this happened after updating to iOS 14. To clarify, have you updated to iOS 14.0.1 yet? If not, let's start by having you do that as shown here: Update your iPhone, iPad, or iPod touch

After updating, test that out to see if you still have the same issue. If that persists, we'd recommend removing your email account and adding it back to your device through the steps under the heading "Remove your email account and set it up again" in this article: If you can’t send email on your iPhone, iPad, or iPod touch

This should help to clear that up for you, but if you run into further issues, you may need to reach out to your email service provider for further help.
