Mail on my iPhone and iPad both show relative date: Monday, Tuesday, Yesterday, and the time today.
How do I show the date before yesterday?

That is extremely unfortunate, and in my humble opinion, stupid.
It works on Mojave and previous desktop OS, probably later as well. So much for unifying desktop and iOS

In the Mail App on iPad or iPhone, mail is listed by day of the week for the previous 7 days, then shows the actual date past that. This is not a user selectable setting.
