The VPN symbol suddenly disappeared on each of my phones, but it says its connected under Settings. I’ve deleted and reinstalled the VPN, tried using different brands of VPN and the symbol does not appear anymore. Is it connected or not?

Why are you using a VPN at all? It serves absolutely no purpose.
A VPN is designed to connect you securely to a private network, not a public network like the Internet.
Get rid of the VPN. It's nothing but a glorified proxy server that gives all of your data to a single company that you can't trust.
The restore your phone to factory defaults and see if the problem persists. If it doesn't, there is something else on your phone causing the problem. Possibly the leftover cruft from multiple VPN clients.
Resetting network settings may also help.
Then contact the developer of the VPN app you're using.
I am using three different VPNs and getting the same result with each, and occurring on each of my devices, therefore its more likely an issue with iOS.
