I asked about this some time ago, but never got an answer that works. I'm wondering if anything has changed. I just want to do a simple transform, like a zoom in, but control the ease in and ease out so that it's nice and smooth. Ken Burns does not offer any customization, so that's not the solution for me. Using keyframes in Transform, can I adjust the curves for a nice, gentle ease?

When you change the interpolation of the keyframe to smooth, the bezier handle appear initially aligned with the straight path.
Look for the red dot (the handle with the blue dot is rotation):

You achieve a Ken Burns effect with (at least some) user control not with the Transform tool, but with the Crop->Crop tool.
I get a totally different result from crop, but as Tom says, it also does not allow easing. (I wanted to upload a video sample, but I can't see how to do that. Only still or Youtube.)

As for motion, I assume you mean like a position as opposed to a zoom in. I'm not seeing any handles when I right click, only the option to change from smooth to linear or to lock point.
Tom, I'm not seeing these handles. When I select smooth and then click and hold on the keyframe yellow thing, it just moves the placement of the image. No bezier handles at all. Not sure why. In any case, this will only apply to X and Y, but not Z position? If so, it won't help me even if I could get this to work.
I use to shoot stills under a real rostrum camera and calculating ease in and out on a move in was the most basic thing, so it shocks me that FCPX will not do this in 2020. Is there a plugin or something?
When I grab the red dot and move the handles, it changes the linear move into a curve and so the camera moves all over the curve instead of in a straight line. I must be using them wrong. I just want it to ease to the final position so it lands really softly. Of course, this still doesn't help the Z axis.

There might be. I don't know of one. There's also Motion, which is designed for animation.
But crop, crops the image rather than zooming in on it so that it fills frame.
Try it out...
I have used crop and Ken Burns. KB has little control and Crop cuts off the image, which makes sense for cropping, but not what I want. I want the image to zoom in and fill frame, moving X, Y and Z.
The crop/crop function has no easing feature either.
Here is a quick example using just the Crop->Crop and a few keyframes.
