A simple Internet search can find similar complaints about any other phone you like, with the exception of new Samsungs because they come with two (yes, two, for which you pay extra, whether you like it or not) screen savers applied at the factory. It's not appropriate to link to them here, but as an example searching "Google Pixel 5 easy to scratch" will bring up many hits.
Your iPhone 7 is completely irrelevant - glass formulations have changed since then to be stronger when it comes to shattering at the cost of being slightly softer - as has been explained to you several times.
There aren't "multiple grades" of glass being used here.
I will give you the same challenge I have others who have made the same assertion: purchase or find someone with a set of Mohs scratching tools. Prove your display scratches at a lower level than other tests and reviews have stated, and you can present the evidence to Apple.
If you leave scratches at say Mohs 2, it would be hard for Apple to deny that was a sample defect.
