I have downloaded latest drivers. and virus scanner to make sure print files are not corrupted. Has apples latest update made. these printers incompatible with macos?

For the HP printer that only prints in color, we recommend to see if you have the option to select, "Black & White" in Print dialog: https://support.apple.com/guide/mac-help/choose-settings-in-the-print-dialog-on-mac-prtct002/10.15/mac/10.15.6
If that doesn't help, we suggest to reset the Mac printing system: Reset the Mac printing system to solve a problem
