If all of your accounts are IMAP, I would just remove the accounts and add them back again. You can do so in the Internet Accounts System Preferences.

If any of them are POP, then you would have to find a way to back up the messages that you have downloaded from the server.

That may be possible by copying the account folder in ~/Library/Mail/V7/. If you do have POP accounts, post back noting as such and I'll try to explain how to find the account folder.
