Name in my iCloud mail
I’ve changed my last name but my friends still see my previous last name when they get messages from me.

What their devices display as your name is determined by a setting on their phones; it is not determined by your phone - unless they have *no* contact entry for you, which would be unusual for a friend, in which case the email itself will carry an identifier for you.
Have they edited your name in their list of contacts or address books?
