If you still have an issue, delete the existing printer in
> System Preferences> Printers & Scanners, and add it again.
Connect an AirPrint printer to a Wi-Fi network - Apple Support.

I didn't find an update at HP, but I deleted my old HP Smart Scan and downloaded HP Smart Scan from the Apple App Store. That cured the problem for me.
But then I found Image Capture, and to me that is an even better app for scanning. Don't be put off by the word "Image" - it scans documents too!
Found an updated driver and scan SW for my OJ at HP.com https://support.hp.com/us-en/drivers/selfservice/closure/hp-officejet-pro-8620-e-all-in-one-printer-series/5367611/model/5367613?ssfFlag=true&sku= - did not help - issue persist - SW crashes at 2nd scan (multi page or adding a 2nd) - SW reopens and recovers only first page
Well I uninstalled and reinstalled same issue it started today after I did the upgrade apple needs to fix the I went to the hp updates and there is no update for their new software they need to fix it and asap. I depend on my scanner since I work remotely and this is a big issue for me.
Same Problem. Works fine when connected to other devices. Stopped working after the update to Big Sur.
Although the problem is because of old copies of HP Smart Scan the better solution is to use what Big Sur supports - Image Capture. Despite its title it scans documents, and is easy to use. It even lets you specify where to store the scanned document for image!
I was able to solve this issue on both a MacBookPro and Mac large screen desktop that begun after the upgrade to BigSur

Use the uninstaller. Search for the SW & Drivers for your printer/scanner - note: do not download the default, "choose a different OS" and select MAC OS 11.0. Install the drivers. Start working again after a Reboot (I did also a CMD-OPT-P-R while I was at .it...). Working all again as previously.
I am having the same issue when scan - only one page scans and then HP Easy Scan quits. I installed Big Sur two days ago and this has never happened prior to the upgrade.
I had this problem. I found that my HP Easy Scan app was quit old, and had not been updated, so deleted it and re-installed it from th App Store. Now it is OK, and I can scan more than a single page.
