Incorrect date on calendar icon in launchpad (from Catalina to Big Sur)

Ever since Catalina & even now with Big Sur I have had issue of wrong date "JUL 17" appearing on calendar icon in launchpad. I found a temp fix by checking and unchecking the box for 24hr time format in date & time settings every time I open my mac.

Is there a permanent fix or someone knows why is this happening because this is quite irritating.
