I have a Retina MBP 13" late 2013. I noticed that when I plugged my extended HP 27f 4K monitor, I can no longer use the max screen resolution on my MBP which is 2560x1600. Even when I unplugged my extended monitor, I don't hav in my display preference the option to use 2560x1600.
Any thoughts? How can I set my resolution to 2560x1600 again?

According to Apple's specs on this notebook:
Graphics and Video Support
Which is telling me that one or two external displays can be supported, but only at 2560 x 1600 each, not 4K. If possible, you should change your HP to operate at this resolution when connected to your notebook to see if this resolves this issue.
Yep, I'm just after for my MBP's max screen resolution. I don't see a way natively in my MBP with macOS Catalina that can
set screen resolution to 2560x1600. But I know previously my already using 2560x1600.
Currently, I found and installed a 3rd party app that can set the screen resolution that I wanted.
... and what happens if you select the "Default for display" option? That is, does your notebook now display at 2560 x 1600?
nope it will use 1280x800
