If necessary, you may want to reset the printing system and re-add the printer.

If your Mac needs drivers then Epson needs to provide them: macOS 11 Big Sur Support
Excerpted from one of those documents:
"Epson recommends you select Never Upgrade to continue using the Epson driver with your product. This option will ensure that all your product’s features are available in the software. If you select Upgrade, your product will use the Apple AirPrint driver instead."
Apple recommends you do not install any drivers provided by the manufacturer: Add a printer on Mac - Apple Support
"Don’t install the software that came with the printer or from the manufacturer’s website; ..."
Conclusion: Add Epson to the list of printer manufacturers to avoid.
I have an Epson NX 625. Maybe 'drivers' was the wrong term. My printer has worked just fine until the last update. Now this is the message I get when I try to add the printer.
Which printer exactly do you have? Each model has specific drivers you can download. Some do work with Big Sur, some have AirPrint, some are too old
