Just updated to iOS 14.2. Typing lag in Notes app is very bad. I hope Apple is planing a solution in next update as the app is almost unusable now.

Try a hard reset of your iPad by holding down both the Home and sleep/wake buttons simultaneously until your iPad goes to black and restarts with Apple logo, then release the buttons after upgrading/updating your iPad.

Thanks for the suggestion but, unfortunately, it did not help — tying lag is still severe in Notes.
What is the rated storage capacity of your iPad and how much internal, free data storage space is left inside of this iPad?
Have you tried simply quitting the Notes app in the iOS App Switcher then just re-launch it?
