macOS Big Sur update ruined some of my apps. How do I restore to my previous backup?

macOS Big Sur update ruined some of my apps. How do I restore to my previous backup? Can't access the internet using Safari, and some (most) of my apps on my MacBook Pro don't work. Too expensive to upgrade most of these apps. So...

Can someone help me restore my last backup?

See if the following article can help ... specifically the section, titled: Other macOS installation options:

The issue may be that this will not work if you are unable to access the Internet ... and if that is the case, you will need to use another computer that can, to create a bootable macOS installer.

Boot into Safe Mode by booting with the Shift key held down and check there to see if the problem persists.  Reboot normally and test again.

NOTE: Safe Mode boot can take up to 10 minutes as it's doing the following;

• Verifies your startup disk and attempts to repair directory issues, if needed

• Loads only required kernel extensions (prevents 3rd party kernel/extensions from loading)

• Prevents Startup Items and Login Items from opening automatically

• Disables user-installed fonts

• Deletes font caches, kernel cache, and other system cache files

Have you run any "cleaning", "optimizing", "speed-up" or anti-virus apps on your Mac? If you have download and run Etrecheck. Etrecheck is a diagnostic tool that was developed by one of the most respected users here in the ASC and recommended by Apple Support  to provide a snapshot of the system and help identify the more obvious culprits that can adversely affect a Mac's performance.

Copy the report

and use the Additional Text button to include the report in your reply.

IMPORTANT:

Before running Etrecheck assign Full Disk Access to Etrecheck in the Etrecheck's Privacy preference pane so that it can get additional information from the Console and log files for the report:

Also click and read the About info to further permit full disk access.

Then we can examine the report and see if we can determine what might be causing the problem.

This method is predicated on having a Time Machine Backup that pre-dates the issues being experienced. Shutdown and connect to charger. Pug in the Time Machine Backup drive. Startup and Immediately hold Command + r. It will present several options. Choose Restore from Time Machine and let is perform until notified it has finished. Restart and should be back up and running.

FWIW, I have upgraded two of my Macs to Big Sur and have had zero issues ... at least, so far. I am running (currently) the very latest update, 11.1, on both. I am not seeing this issue with Safari, but I don't use Google Chrome as I prefer the Opera browser (which is based on the same Chromium engine, but without the excessive overhead that Chrome introduces.) Regardless, Chrome does not appear to be an issue for you, and at this point, I'm not sure why Safari is causing you so much grief.
