I have an iPhone SE. When I switch from speakerphone back to a regular call it mutes the other person on the line. They can hear me, but I hear nothing. I have to switch back to speakerphone to carry on the conversation.

I understand that. When you switch off speakerphone, are there any more selections you can use for hearing? Do you have anything connected to Bluetooth? If you don't have anything else, then you can try creating a current backup and then restore the iPhone to that backup. There could be something corrupt in your copy of the iOS.
If I am talking to someone and never switch to speakerphone I can hear just fine. It’s if I put someone on speakerphone and then take them off that I can’t hear them (or any sound) at all.
