I’ve MacBook Air 2020 and mistakenly added the kids as admin accounts when I should be the only admin. How do I change their accounts to standard? When I go into the options and unlock it won’t let me select any of the current users ( even standard) and I’ve gone into their accounts and can’t seem to do anything within theirs either.
please help !

You seem to know where the settings are for this. You can't downgrade a user account from Admin to Standard if the user account is active on the computer, so switch across to each open account you wish to change and log out.
Then go back to your account and into System Preferences > Users and Groups
Click on the padlock at the foot of the pane and enter your computer password.
Select the account you which to change then remove the tick in the box allowing the account to administer the computer.
Do this for each of the childrens' user accounts.
You should get a message saying that the computer must be restarted to complete the change(s).
