Advanced options (e.g. SSL) missing in Internet Accounts

I added an IMAP account successfully to Mail.app in Internet Accounts

I need to make sure it's connecting by SSL with the Encrypted Password option

Apple provides this help page: https://support.apple.com/guide/mail/change-server-settings-cpmlprefacctadv/mac

However, all those options are missing when I click "Advanced" in Internet Accounts in MacOS Big Sur 11.1. Screenshot:
