I have a 2020 M1 Mac mini on which I installed the 11.2 update today. I know for a fact that prior to the update, all guest access was disabled. Immediately following the update, guest login was enabled (visible during the pre-boot login screen and enabled under System Preferences -> Users & Groups). I've since re-disabled guest access, but this is obviously less than ideal.

That's not that unusual. Often when upgrading a system a preference gets set back to the default setting. Not sure why but it may be due to the preference file for the setting that got reset was damaged, was detected as so and replaced. It's nothing to worry about as we can just reset the preference like we want it.
Same here on my Intel Mac Pro 2019. Suddenly appeared after Big Sur 11.2 Update yesterday, before I never saw a log-in for guest account, now I also have it when changing accounts (in the right upper corner).
I don’t think guest being enabled is the system default. I also don’t think we should find macOS updates modifying system preferences as acceptable. At a minimum, this is a security issue, if not bad QA practices on Apple’s part.
You must be quite new in the "Apple world". Every single update (even minor) modifies system preferences. Try to modify your sshd_config file to make it more secure (by disabling password authentication, for example). Next time you update it will be gone...
No, I've actually been a long-time Apple, but really got into it with the initial introduction of Mac OS X, dual booting with OS 9. Over the years, I've found Apple inconsistent in their QA around OS updates, and having a setting like this get changed during an update is really concerning.
I have been using Apple machines since at least Leopard. So how many upgrades and updates is that? 10 or 20??
I have never before had a user account or security setting altered. if I had not been sitting in front of my machine when the upgrade ended and the reboot happened, I would not have seen the guest user access enabled. This is a big privacy and security hole from the one company that prides itself on maintaining user and customer privacy.
Somebody rushed this code out I think....

I have the same issue with guest account showing on start screen. I have disable it after update, but It shows again after restart my Mac. Has anyone find the solution for that?

Strangely, this only happened on my Mac mini (M1, 2020), but not my MacBook Pro (16-inch, 2019).
It was on every Mac I've bought.
