Unsync iPad from Hotmail account

I am using an old iPad, version 3 I think, to entertain grandchildren. However, I just discovered that the Hotmail account is showing up on the iPad. If I go to Mail > Account I get an option to Delete Account, but I do not want to delete the account, just prevent the iPad from ever connecting to any e-mail account.

How can I achieve this?
