I am looking purchasing the gps ( non cellular) series 6 Apple Watch for my son but see sky isn’t compatible . Is that only the cellular version if you want to use without phone near? Does any one have a series 6 and use it with a sky contract phone . ( we have to the iPhone 12)

Yes, your son is good to go. I was just not sure if the iPhone 12 mentioned in the first post was his, or just that one existed in the family.
I use a GPS Only Series 4 Apple Watch with my iPhone 12 Pro. Since my iPhone is basically glued my hip, I get all the Apple Watch benefits, without paying extra for a Cellular Apple Watch, and not having to pay an extra $10 a month for cellular service. I also tend to use low cost pay-as-you-go cellular service, that does not support the Apple Watch. So your son and I are basically in the same boat.
Then again, my Wife does not want her iPhone surgically attached to her body, so she has a Series 6 Cellular model (Christmas gift).

so I’ve said that’s it last one when he wants new one he can work and buy it!! lol
so I’m happy to pay a bit more then it lasts now and he can be happy few years .

You said an iPhone 12 was available, but your son needs to have an iPhone 6s (not 6) or newer iPhone that he can pair the Apple Watch to.

Your iPhone Cellular carrier Never knows that you have a GPS Only Apple Watch. So it does not matter what carrier you are using.
With respect to phone calls, the GPS Only Apple Watch is just a Bluetooth speaker, and Cellular carriers do not know nor care that you are using a Bluetooth device with your iPhone.
Of course as javaliga says, the GPS Only Apple Watch can do everything the cellular model can do, as long as your iPhone is nearby, so the Apple Watch can leverage all the iPhone's capabilities.
