unticked songs play on device

Greetings.

I have unticked my Christmas songs in iTunes on my PC, but they show up on my iphone/ipad. I have searched to find an answer before coming here, but I haven't found what I'm looking for.

Is the Untick option only for iTunes on my PC, and syncing my devices syncs all music, ticked or not?

I am running Windows 10, have all my apple products up to date, subscribe to Apple music.

I have an iPhone 8, and iPhone 6 as my kitchen player, and an iPad pro (2016) and all of those will play the unticked songs on my PC in my iTunes library.

Any help would be appreciated.
