Apple Mail - Question mark in blue box instead of signature

When comparing mail my signature often does not load and instead a question mark in a blue box appears. This happens on both my iPhone and my MacBookAir - so I presume it is an Apple Mail issue. When using Gmail the signature appears (but that is because it is loading from G Suite I presume). Interestingly when sending from Apple Mail (when the blue box with question mark appears instead of my signature) and receiving and viewing the email in Gmail (for example) the signature is visible (as it should be). However when sending from Apple Mail and receiving it and viewing it in Apple Mail then only the blue box appears.

Ideas most welcome.

Thank you - but the issue is not with setting up the signature, it is with it dropping out and being replaced with the blue box / question mark symbol.

Any further ideas or help you might have would be most helpful.
